Ingredients
- 3 lbs Chicken Breasts
- ½ cup Cornstarch
- 2 tsp Garlic
- 2 tsp Ginger
- 1 tsp Red Pepper Flakes
- ¾ cup Water
- ¼ cup Soy Sauce
- ½ cup Brown Sugar
- 1/3 cup Red Wine Vinegar
- 1 Orange, zested
- 2 tbsp Orange Juice
- Kosmos SPG BBQ Rub
- 2 cups White Rice
Instructions
- Slice boneless, skinless chicken breasts into 1-inch cubes.
- In a large mixing bowl, combine the chicken and cornstarch. Toss until the chicken is well-coated. In a separate mixing bowl, combine all the remaining ingredients except the oil. Whisk until well incorporated.
- Before placing the chicken on the grill, add some seasoning, we used Kosmos SPG BBQ Rub. We recommend using something with a very simple flavor as the orange chicken has strong flavors already.
- Preheat the griddle to medium-high heat. Add a thin layer of oil and the chicken to the griddle. Toss the chicken frequently using spatulas to ensure all the sides are seared. Cook until the chicken reads 165° internal temperature. Add half of the sauce to the chicken, stir continuously until the sauce is thickened and coats the chicken.
- Add the remaining sauce and stir while it reduces. The sauce should be thick and sticky, fully coating the chicken.
- Finally, add the white rice to the griddle and allow it to brown. Combine with the chicken and sauce, then remove from the grill and it is time to eat!
